Pinot Noir and Merlot in the highest elevations of Japan’s wine country of Yamanashi which she crafts into expressive wines of insistence and power

and cocoa powder co-mingle in the glass while lengthy vanilla and supple tannins carry out the finish

the wine reflects the classical hazelnut and honeyed quality of the best of the whites from the region

and further aged in the bottle for 36 months

Grapes are hand harvested, destemmed, and macerated 12 hours before gentle pressing. The wine is fermented and aged in stainless steel tank, spending 8 months on fine lees before bottling in June 2018 without any fining, filtration or added SO2. Importer's note
